Ramadan 2021: Mandarin Oriental, Kuala Lumpur
Drawing inspiration from the aesthetics of historically imbued Malay kampung architecture, the hotel invites diners to marvel at its decorations that represent the distinctive patterns, designs, and structures. Guests will immediately be brought back in time and reminisce Raya celebration with family and relatives.
From 13 to 18 April, and 3 to 12 May 2021, foodies are invited to sample authentic recipes that are synonymous to the season. First up would be the seven variations of kerabu that are on rotation daily such as Kerabu Taugeh, Acar Timun Nenas and Kerabu Perut Air Asam, to name a few. In addition to local crackers and vegetable condiments, the selection of kerabu is accompanied by homemade sambal such as Budu - fermented fish sauce with chili and onion; Sabal Ijo – spicy green chili & lime; and Sambal Oelek – spicy Indonesian red chili & lime, that are sure to tantalise any tastebuds.
Diners can warm up to a bowl of hot Bubur Lambok Berlauk – rice porridge with local spices, vegetable & minced chicken; and Sup Ekor Berempah or oxtail soup. Thereafter, foodies can continue their journey with Nasi Kukus Daun Pandan – steamed Jasmine Rice; Mee Goreng Berhias – fried yellow mee with seafood & vegetables; Udang Sambal Petai – tiger prawns & bitter bean in spicy tomato chili paste; Ikan Masak Lemak Cili Padi – fish in spicy yellow curry, and more.
Foodies who love barbecued food can anticipate a selection at the BBQ Live Station which will be serving beef steak; sambal sea bass; roasted chicken, and marinated lamb shoulder. Other dishes include an assortment of Malay hot dishes such as Ayam Bakar Sunda Sos Madu – aromatic Indonesian baked chicken with local spice & spicy sweet honey sauce; Botok-botok Ikan – traditional fish with local spice and local herbs; and Nasi Ulam Diraja Isi Ikan – aromatic herb rice with local spice & minced fish.
For those with a sweet tooth can revel in a wide range of desserts like Ais Kacang & Cendol – shaved ice with traditional condiments; Warm bubur kacang bersago – sweetened green bean porridge; and Bubur Jagung Bersago – sweet corn soup with coconut milk & sago.
From 19 April to 2 May 2021, diners are invited to go on a patriotic detour to the 14 states of Malaysia as Mandarin Oriental brings a complete buka puasa experience under one roof with its Grand Buka Puasa Buffet. Providing an exciting dining adventure, the array of delights is presented over three venues – Mosaic, Lounge on the Park and Diamond Ballroom – all of which are located on the upper lobby of the hotel. With time-honoured preparation methods, guests can anticipate authentic Malay recipes that are unique to the respective states making the buka puasa buffet one that would bring back childhood memories of Raya celebration.
From Penang, there are Biryani Ayam – chicken biryani with fresh herbs & spices; Varuval Kambing – lamb cooked in spice & herbs; Masala Udang – prawn cooked with tomato & onion; Chena Brinjal Masala – chickpeas & eggplant in pickling spice; char koew teow, and mee mamak.
From Perlis, there are Gulai Ayam Siam – slow cooked chicken with spices and coconut milk; Ketam Masak Lemak Daun Selasih – flower crab in yellow coconut broth with Thai basil; Pajeri Nenas Arau – pineapple curry. From Perak, sample Rendang Tok Pedas – traditional spicy beef rendang; Pajeri Berhias – pineapple & eggplant curry. For Johor, there are Burasak; Rendang Ayam; and more, while for Pahang, there are Nasi Kebuli Istana Diraja – royal chicken rice with spices & fresh herbs; Ikan Patin Tempoyak. In the beautiful historical state of Malacca, chefs will be making Ikan Asam Pedas Bukit Katil – fish fillet in spicy & sour gravy; Assam Pedas Telur Ikan – spicy assam fish eggs.
From Terengganu, diners would be thrilled to sample Sata Ikan – grilled fish & grated coconut mousse; Otak-otak; and Gulai Ikan Tongkol – cod fish curry. For Kelantan, there are Satay Baung Kota Bharu – assorted satay; Nasi Ulam Diraja – traditional Malaysian herb rice with local spices; Ayam Rangup Kerabu Mangga – crispy roasted chicken with Thai mango salad, while for Negeri Sembilan, there are Lemang Pulut Susu – baked glutinous rice in bamboo; Rendang Itik Minang – traditional duck rendang; Telur Itik Masak Lemak Kuning Pucuk Pegaga – duck egg cooked in spicy yellow coconut broth with local herbs; Masak Lemak Siput Sedut – slow cooked freshwater snail in spicy coconut broth.
For Sabah and Sarawak, there are Daging Masak Taucu – beef with fermented soya bean; Sayur Kangkung – stir fried water spinach; Nasik Aruk – Sarawak-style fried rice; Manok Pangsuh; Laksa Sarawak – rice vermicelli with shrimp broth & coconut milk.
In addition to the ABC and Cendol desserts at the live stations, guests can take a pick at the desserts which include assorted Raya kuih and cookies; assorted Nyonya kuih; Pulut Mangga Santan Kelapa – glutinuous rice with mango & coconut milk; Bubur Kacang Bersago – warm sweetened green bean porridge; Bubur Cha-cha Jagung Manis Bersago – warm pandan strip porridge with sweet corn, yam & sweet potatoes. For those looking for more will find that the outdoor terrace of Lounge on the Park offers an assortment of local fruits; Pisang Goreng – fried banana fritters; Cempedak Goreng – fried jackfruit fritters; and Cucur Kodok.

The Bunga Melur Set Menu, priced at RM 592 for four persons, offers Buah Kurma – dates; Kajang Satay Kandar – chicken, lamb and beef satay with condiment; Sata Ikan – grilled fish mousse; Sup Kambing Roti Bengali – Indian style lamb soup with fresh loaf; Nasi Biryani – Biryani rice with fresh herbs; Nasi Putih – white rice; Ikan Siakap Kerabu Mangga – deep fried seabass with herb sauce and young mango salad; Ketam Masak Lemak Daun Selasih – crab cooked in yellow spicy coconut broth with Thai sweet basil; Asam Pedas Telor Ikan – aromatic fish and fish roe with spicy sweet-sour broth; Ayam Goreng 65 – Indian style fried chicken with local spices; Asparagus Goreng Belacan – stir fried asparagus with onion shrimp’s paste; Ulam Kampung, Telur Masin dan Ikan Masin – local garden salad; Bubur Kacang Bersago – sweetened green bean porridge; and Aneka Kuih Melayu – assorted Nyonya kuih.
